Green Chili

Even better than red chili

Ingredients

8 fresh long green very hot chillis, minced/crushed
1 medium onion, chopped fine
5 cloves of garlic, crushed
Half teaspoon oregano
1-2 teaspoons ground cumin
1 lb lean pork, cut into 1" cubes
1 cup chopped fresh tomatoes
1 can pinto beans or black-eyed peas, drained etc
Up to 1-1/2 cups chicken/veg stock (water will do)
Salt, black pepper, to taste
Olive oil

Heat oil in a large pan. Saut onion, garlic until onion is clear. Add green chillis, saut and stir. Add pork cubes, oregano and cumin and stir to brown all sides of the pork.

Add tomato and stock/water until most of the pork cubes are covered with liquid. Stir well, reduce the heat to a simmer. Cover for 30 minutes. Check occasionally to make sure the stuff isn't scorching on the bottom. Add more stock if it's thicker/drier than you like. Add beans, and salt and black pepper.  Stir well.

Serve with fresh corn tortillas or rice.
